Our ‘smoker’, John Inglis, has perfected his craft using simple, traditional methods to achieve the delicate balance of flavors unique to Caithness Smokehouse.
These traditional methods must not be rushed, but the richness and subtlety of the resulting flavors cannot be matched by modern commercial smoking methods.

Caithness is the most northeasterly county on the Scottish mainland. It’s landscape consists largely of open rolling moorland to the North and peat bogs – known as ‘the Flow Country’ - to the south, these are considered amongst the best preserved peat bogs in the World. Caithness remains a largely unspoiled and undeveloped county ringed to the north and east by dramatic coastal scenery. This underdeveloped nature, combined with strong westerly breezes provides air that is considered amongst the cleanest in Europe.
